{Oven Baked} Portobello Mushroom Burger

- 4 large portobello mushrooms
- ½ cup olive oil
- 1 cup beef broth
- 2 Roma Tomatoes - chopped
- ¾ cup Colby Jack Cheese Shredded
- 1&1/2 tsp Marjoram Seasoning
- ½ tsp salt
- 4 hamburger buns split
Preheat the oven to 425 degrees
Remove, and discard stems from mushrooms. Use a spoon to scrap out the gills
Place the mushrooms on a baking sheet
brush both sides of the mushrooms with olive oil - do not discard left over oil
Place the mushrooms stem side down in the pan
Pour 1/2 of the beef broth over the mushrooms
Bake for about 6 minutes
While those are baking, use a small bowl to mix the tomatoes, cheese, seasonings, and 1 Tablespoon of the remaining olive oil
Turn over, pour the remaining broth over the mushrooms
Add the cheese mixture to the inside of the mushrooms
Bake for another 10 minutes
Serving suggestion: Enjoy with Sweet Potato Fries
- Marjoram is similar to Oregano, but more mild in flavor. If you don't have any on hand - You can substitute it with chives, sweet basil, or oregano
