Equipment

  • 18 wooden toothpicks

Materials

  • 18 cupcakes
  • 16 oz. buttercream frosting recipe in notes
  • 36 Candies Mike and Ike
  • 2 tbsp. sprinkles

Instructions

  • Pipe frosting onto cupcakes.
  • Add some colorful sprinkles to each cupcake
  • Make popsicles by cutting toothpicks in half and pushing them into the center of Mik and Ikes.
  • Match up two Mike and Ike Popsicles and place them together in the center of the cupcakes

Buttercream Frosting 
Ingredients
  • 1/2 cup of unsalted butter - room temp
  • 3 cups of confectioners' sugar
  • 1&1/2 tsp. vanilla extract - clear 
  • 2 tbsp. milk
  • (food coloring optional) 
Cream butter in stand mixer fitted with paddle attachment, beat in sugar, add vanilla and milk. Continue to mix for 3-4 minutes.
