- 6 hard-boiled eggs
- ¼ cup mayonnaise
- 2 tbsp. Jalapeno Slices - chopped
- 1 tbsp. Stone Ground Mustard
- ¼ tsp. salt
- ¼ tsp. ground black pepper
- 2 tbsp. Minced fresh cilantro
Peel the hard-boiled eggs, and cut in half
Place the white portion in your deviled egg tray
Place the yolks into a medium sized mixing bowl, and mash
Add the rest of the ingredients, reserving 1 Tblsp. of cilantro
Spoon or pipe the yolk mixture into the egg whites, and sprinkle the cilantro on top for decoration and more flavor
Cover and refrigerate until ready to serve
Even with 1/4 cup of mayonnaise and some mustard, the egg mixture is still on the firm side. If you like your deviled eggs to be super creamy and moist, I would suggest adding another 1/4 cup of mayonnaise. To be sure, hold off until the mixture is ready. You can always add more, but it's hard to take it back once you've added it. :)
