Jalapeno & Cilantro Deviled Eggs…

You can use fresh or pickled jalapeno slices. I’ve used both. I happen to love pickled jalapeno on everything I eat, so that’s my preferred. It gives it a relish type flavor and a little bitty kick.

Cilantro, however, I prefer fresh. You just don’t really get the flavor from dries or partially dried cilantro.

Even though fresh cilantro is my favorite way to go, it’s not quite warm enough for my herb garden. I used partially dried cilantro this time, which is a great substitute in a pinch.

Fresh, pickled, or partially dried – Either way you do it, you’ll love the finished product.

Spicy Jalapeno & Cilantro Deviled Eggs Recipe.
- Prep Time: 15 min.
- Cook Time: 10 min.
- Total Time: 35 min.
- Yield: 1 dozen 1x
Ingredients
- 6 hard-boiled eggs
- 1/4 cup of mayonnaise
- 2 Tblsp. Jalapeno Slices – chopped
- 1 Tblsp. Stone Ground Mustard
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 2 Tblsp. Minced fresh cilantro
Instructions
- Peel the hard-boiled eggs, and cut in half
- Place the white portion in your deviled egg tray
- Place the yolks into a medium sized mixing bowl, and mash
- Add the rest of the ingredients, reserving 1 Tblsp. of cilantro
- Spoon or pipe the yolk mixture into the egg whites, and sprinkle the cilantro on top for decoration and more flavor
- Cover and refrigerate until ready to serve
Notes
Even with 1/4 cup of mayonnaise and some mustard, the egg mixture is still on the firm side. If you like your deviled eggs to be super creamy and moist, I would suggest adding another 1/4 cup of mayonnaise. To be sure, hold off until the mixture is ready. You can always add more, but it’s hard to take it back once you’ve added it. 🙂
