Materials

  • 2 tsp. cajun seasoning
  • ½ cup mayonnaise
  • ¼ cup roasted red peppers drained
  • 1 tsp. garlic powder
  • ¼ tsp. onion powder
  • ¼ tsp. salt
  • 1 Tbsp. olive oil
  • 1 lb. uncooked shrimp deveined with shell and tail removed
  • salt and pepper to taste
  • 1 tomato sliced
  • 1 red onion sliced
  • 1 romaine lettuce rinsed and cut into sandwich size
  • 4 hoagie rolls 
  • 4 tbsp butter soft unsalted

Instructions

  • In a small blender, add mayonnaise, peppers, and seasonings
  • Blend until smooth and creamy
  • In a pan over med/high heat, add the olive oil and warm
  • Add the shrimp to the hot pan
  • Shake a little salt and pepper over the shrimp
  • Continue to cook shrimp, tossing occasionally until shrimp turns pink
  • Spread butter on the inside of your hoagie rolls and either - place them under the oven broiler to toast them, or use a hot skillet to toast the buttered inside of the roll
  • Remove rolls, and spread cajun sauce on one side
  • Add tomatoes, lettuce, onion, and shrimp
