Shrimp Po Boy with Cajun Sauce

This recipe was inspired by a fried shrimp Po’ boy with tartar sauce. I know the authentic Shrimp Po Boy sandwiches are made with fried shrimp. I’m not huge into frying my food or of tartar sauce, so this is my little twist on the delicious looking sandwiches that caught my eye in my old Family Circle Magazine.

The dressing is super simple and the shrimp can be grilled with a little salt and pepper seasoning, or even sauteed in olive oil. Either way is easy, peasy.
