Chocolate Chunk Zucchini Brownies

Materials

  • 1&1/4 cups sugar
  • ¼ cup cocoa
  • ½ cup oil
  • 1 large egg
  • 2 tsp vanilla
  • 2 cups flour
  • 1 t salt
  • 1&1/2 tsp baking soda
  • 2 cups zucchini - with skins removed & grated
  • ½ cup chocolate chips
  • ½ cup Hershey Bar broken into 1 inch. chunks

Instructions

  • Preheat oven to 350 degrees
  • Beat sugar, oil, egg, cocoa, and vanilla
  • In a separate bowl, mix flour, salt, and soda 
  • Gradually add the dry ingredients to the wet - stir
  • Add zucchini and chocolate chips, and Hershey Bars pieces - stir
  • Pour mixture into a greased 9x13-inch pan
  • Bake for 30 minutes or until a toothpick inserted into the middle comes out dry
