Chocolate Chunk Zucchini Brownies

These are the best! My kids loved these zucchini brownies. They even knew the zucchini was in there because they helped make them! Chocolate chunks, and chocolate chips make these brownies irresistable!

These Zucchini Brownies are so moist and “chocolatey”! I’m pulling this one up from the archives with some updated pictures. 

The kids would never know these Zucchini Brownies are filled with a vegetable. Well…as long as you don’t tell them the name. That might give it away. I tried them out on my most finicky of eaters – my oldest, Abigail. Abi loved them. She was so excited to be able to add one more “healthy” food into her diet. Of course, it’s masked in gooey, sweet goodness, but it’s a start! My seven year old son, loved putting the zucchini into the food processor, and adding the strange ingredients into the dessert.

 Here’s the recipe!:

Bake for 30 minutes or until a toothpick inserted into the middle comes out dry

 

This recipe couldn’t come at a better time. Our itty-bitty garden is loaded with zucchini right now. I bet if you planted zucchini, you’re reaping a bunch too! Who knew that zucchini would make a brownie so dang delicious?!

Chocolate Chunk Zucchini Brownies

Ingredients

  • 1&1/4 cups of sugar
  • 1/2 cup of oil
  • 1 egg
  • 2 t of vanilla
  • 2 cups of flour
  • 1 t of salt
  • 1&1/2 t of baking soda
  • 1/4 cup of cocoa
  • 2 cups of zucchini – with skins removed & grated
  • 1/2 cup of chocolate chips
  • 1/2 cup of Hershey Bar pulled apart into 1 inch. chunks

Instructions

  1. Preheat oven to 350 degrees
  2. Beat sugar, oil, egg and vanilla
  3. In a separate bowl, mix flour, salt, soda and cocoa
  4. Gradually add the dry ingredients to the wet – stir
  5. Add zucchini and chocolate chips, and Hershey Bar pieces – stir
  6. Pour mixture into a greased pan
  7. Bake for 30 minutes or until a toothpick inserted into the middle comes out dry
