I love the old-fashioned cookie recipes like cookie bars. They are some of my absolute favorite snacks to eat. This particular cookie bar has a coconut and caramelized center in this chewy bar and is a lethal combination for me. They are delicious and pretty much, irresistible. Another favorite cookie bar is this recipe for chewy oatmeal barsOf course these vanishing oatmeal bars are also amazing. Let me know if you try them.

The kids loved these as an after-school snack. They didn’t last long on the platter. They’d also make a great party dessert. They are a lot like a brownie. Just cut them into squares and watch them disappear.
