These Chewy Chocolate Chip Oatmeal Bars are great after-school snacks, and they transport well for the holidays and barbecues.

So much easier than baking 3 batches of cookies! These are seriously amazing! I also love that you can easily transport these for holiday meals! Great simple dessert!

These are so delicious…I have to hide them from myself. Don’t get me wrong, I love baking cookies for the kids, but when you can just bake one batch, and DONE… I’m all over it!

Are you ready to make these delicious Oatmeal Bars? Let’s make sure you have everything you’ll need:

  • 1 cup all-purpose flour
  • 1/2 c of unsalted butter
  • 1/2 cup of brown sugar
  • 2 eggs
  • 1 cup of brown sugar
  • 2 T. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1&1/2 tsp. vanilla
  • 1 cup of chocolate chips
  • 1 cup of quick oats

Chewy and delicious chocolate chip oatmeal bars

  • Yield: 10-12 servings 1x

Ingredients

Scale

Crust 

  • 1 cup all-purpose flour
  • 1/2 c of unsalted butter
  • 1/2 cup of brown sugar

Filling

  • 2 eggs
  • 1 cup of brown sugar
  • 2 Tbsp. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1&1/2 tsp. vanilla
  • 1 cup of chocolate chips
  • 1 cup of quick oats

Instructions

  • Preheat oven to 350 degrees
  • Mix the first flour, unsalted butter, and 1/2 cup of brown sugar, and spread out into an ungreased 9×13 pan
  • Bake that for 10 minutes
  • While that is baking, mix the eggs, 1 cup of brown sugar, 2 Tbsp. of flour, baking powder, salt, and vanilla
  • Pour that over the crust
  • Sprinkle the chocolate chips, and oatmeal on top
  • Bake for 20-25 minutes
  • When they cool off, slice into bars

store covered at room temperature for 3-4 days
