Grilled Ribeye Steak with Greek Relish

Materials

  • 2 plum tomatoes - chopped
  • 1 small red onion - chopped
  • 1 cup pitted Greek olives
  • 2 Tbsp. fresh cilantro
  • 2 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • 1 tsp. minced garlic
  • 1 large beef ribeye steak
  • 1 cup crumbled feta cheese

Instructions

  • In a medium bowl, combine the tomatoes, onion, olives, cilantro, oil, only 1 of the Tbsp. of lemon juice and the garlic
  • Place the steak on a large heavy duty sheet of foil and drizzle the rest of the lemon juice on both sides of the steak
  • Pull the foil up around the steak, fold over and seal
  • Grill on both sides for about 7 minutes each or until the steak has almost reached the way you like it
  • Open the foil, pull the steak out and place it directly on the grill for about 1 minute on each side so it gets those beautiful grill marks and crisps up a bit
  • Slice and serve with relish
