Delicious Coconut Cake {Using Cake Mix}

- 13 oz yellow cake mix
- 1 cup water
- ⅓ cup oil
- 3 large eggs
- 2 cups of powdered sugar
- 8 oz. of sour cream
- 12 oz. of coconut shavings
- 1 &1/2 cups of whipped cream
Mix cake mix, water, oil, and eggs. Prepare and bake cake according to the box mix - baking it in 2 (8 in.) square or circle pans
Let cool completely
Once cooled, slice each baked cake down the middle - horizontally (making 4 layers)
Blend sour cream, sugar, and coconut
Spread all but 1 cup of mixture between layers
With the rest of the mixture, add the whipped cream
Spread over the sides and top of the cake
Seal cake in an airtight container or use plastic wrap to cover the cake
Let set out for 1-2 days before cutting into and serving
Covering cake:
To avoid cake frosting sticking to the clear wrap, you can do a couple of different methods.
- Use toothpicks inserted into cake to keep clear wrap away from frosting
- Place cake into the refrigerator for 1 hour to harden the frosting before wrapping it
