A delicious old-fashioned flavored coconut cake.

Ingredients

Scale
  • 1 box of yellow cake mix
  • Additional ingredients from the box mix
  • 2 cups of powdered sugar
  • 8 oz. of sour cream
  • 12 oz. of coconut shavings
  • 1&1/2 cups of whipped cream

Instructions

  • Prepare and bake cake according to the box mix – baking it in 2 (8 in.) square or circle pan
  • Let cool completely
  • Once cooled, slice each baked cake down the middle – horizontally (making 4 layers)
  • Blend sour cream, sugar, and coconut
  • Spread all but 1 cup of mixture between layers
  • With the rest of the mixture, add the whipped cream
  • Spread over the sides and top of the cake
  • Seal cake in an airtight container or use plastic wrap to cover the cake
  • Let set out for 1-2 days before cutting into and serving

Notes

Covering cake:

  • To avoid cake frosting sticking to the clear wrap, you can do a couple of different methods…
  • Use toothpicks inserted into cake to keep clear wrap away from frosting
  • Place cake into the refrigerator for 1 hour to harden the frosting before wrapping it
