Crisp Washboard Cookies

Materials

  • ½ cup butter unsalted - softened
  • 1 cup dark brown sugar packed
  • 1 large egg
  • 1 Tbsp. orange juice
  • 1 tsp vanilla extract
  • 1&3/4 cup all-purpose flour
  • 2 tsp. ground ginger
  • ½ tsp. baking soda
  • 2 tbsp granulated sugar for sprinkling

Instructions

  • Preheat the oven to 350 degrees
  • In a large bowl or mixer, cream the butter and brown sugar together
  • Add the egg, orange juice, and vanilla
  • In a separate bowl, mix the flour, ginger, and baking soda
  • Add the flour mixture to the wet ingredients and mix until moist
  • Drop by spoonfuls or use a cookie scoop to drop batter onto greased baking sheets lined with parchment paper
  • Dip a fork into the water, and press it onto the cookie dough. This is what makes the washboard effect. Slide or lift the fork off of the cookie
  • Sprinkle the cookies with granulated sugar
  • Bake for 15-20 minutes
