- ½ cup butter unsalted - softened
- 1 cup dark brown sugar packed
- 1 large egg
- 1 Tbsp. orange juice
- 1 tsp vanilla extract
- 1&3/4 cup all-purpose flour
- 2 tsp. ground ginger
- ½ tsp. baking soda
- 2 tbsp granulated sugar for sprinkling
Preheat the oven to 350 degrees
In a large bowl or mixer, cream the butter and brown sugar together
Add the egg, orange juice, and vanilla
In a separate bowl, mix the flour, ginger, and baking soda
Add the flour mixture to the wet ingredients and mix until moist
Drop by spoonfuls or use a cookie scoop to drop batter onto greased baking sheets lined with parchment paper
Dip a fork into the water, and press it onto the cookie dough. This is what makes the washboard effect. Slide or lift the fork off of the cookie
Sprinkle the cookies with granulated sugar
Bake for 15-20 minutes
Cookies will spread while baking them
