4 Ingredient Roasted Carrots

  • 2 lbs. of whole carrots
  • 2 Tbsp. of olive oil
  • 3/4 tsp. of sea salt
  • 1/4 tsp. of ground pepper
  • Optional – minced fresh parsley for looks


  • Preheat the oven to 400 degrees
  • In a small bowl, mix the oil, salt, and pepper
  • Pour the mixture into your roasting pan
  • Place the whole carrots, into the roasting pan and toss them
  • *the easiest way is to use your hands
  • Bake for 25-35 minutes, or until browned and tender
  • Optional Serving Suggestion – Toss with minced fresh parsley (it looks pretty that way)




  • you can cut the carrots into small pieces to make them even more tender
  • for a sweeter version, whisk in a little honey into the liquid mixture
