Honey Lime Grilled Glazed Chicken Thighs, Healthy, and Delicious! Perfect for your next barbecue!

Ingredients

  • 1&1/2 tsp. of ground cumin
  • 1 ts. chili powder
  • 3/4 tsp. sea salt
  • 1/4 tsp. cayenne pepper
  • 2 tsp. mustard powder
  • 14 bone-in chicken thighs – skinned
  • 1&1/2 cups of apple juice
  • 1/4 cup of honey
  • 2 tsp. of cornstarch
  • 2 tsp. of water
  • 1 grated lime rind – about 2 tsp.
  • 1 fresh squeezed lime
  • 1/4 tsp. cayenne pepper
  • Cooking Spray

Instructions

  1. Preheat the grill to medium-high heat
  2. In a small bowl, make a dry rub by combining the first five ingredients
  3. Rub the chicken on both sides with the dry rub
  4. In a medium saucepan, boil the juice and honey until it reduces down to about half – this should take about 10 minutes to do
  5. Grab a small bowl, and mix the cornstarch and water
  6. Put the cornstarch mixture into the boiled down juice, and whisk in – Continue to boil, and whisk until thickened
  7. Remove from heat
  8. Add the rind, lime, and pepper to the thickened mixture
  9. Pour half of the glaze mixture into a bowl for basting the chicken
  10. Spray the grill with cooking spray
  11. Grill the chicken over direct heat for 5 minutes on each side, basting occasionally with the glaze
  12. Turn half of the burners off, or move the chicken away from direct heat on charcoal grill
  13. Over inderect heat, cook the chicken for 5 minutes on each side – or until the thighs are done, basting occasionally
  14. Serve with extra glaze. Pairs well with rice pilaf
