Sweet Cornbread Muffins

how to make sweet cornbread muffins


  • 1 cup of yellow cornmeal
  • 1 cup of flour
  • 1/4 cup of sugar
  • 3 tsp. of baking powder
  • 1 tsp. of salt
  • 1/4 cup of oil
  • 1 cup of milk – I used 2%, but any percentage is fine to use
  • 1 egg -beaten
  • 2 Tbsp. of light corn syrup
  • Muffin tins


  1. Preheat your oven to 425 degrees
  2. Grease your muffin tins
  3. In a medium-sized bowl, mix the first five ingredients – cornmeal, flour, sugar, baking powder, and salt 
  4. In a separate larger bowl stir the wet ingredients – oil, milk, egg, and syrup
  5. Add the dry mixture to the wet mixture and mix well 
  6. Pour the dough into your ready muffin tins and bake for 15-20 minutes


  • The dough should easily pour into the muffin tins 
  • Serve with soft butter, or for a sweet treat – add some honey with butter
  • If you prefer to make a big batch of cornbread squares – grease a 9-inch pan and bake for about 25 minutes.
