Chicken And Rice Skillet Casserole

We all need these easy-to-make-on-the-stove-top dinners for our busiest nights. I love that this is all done in one skillet. It means: fewer dishes to clean.


One Pot Meal, Skillet Chicken & Rice Skillet Casserole

Ingredients
- 6 oz. Ben's Original Long Grain & Wild Rice or something similar
- 1 tbsp. Butter – Use the rice packet’s measurement guide
- 2&1/4 cup Water
- ¼ cup Miracle Whip
- 15 oz. Cream of Mushroom Soup
- 1 Tbsp butter
- 3 Chicken Breast
- ¼ c Milk
- 1 tomato
- 3 Mozzarella Cheese Slices
- 6 oz. mushrooms canned
Instructions
- Using a large skillet, add the contents of the rice packet with the butter and water suggestion on the package of rice
- Stir in the miracle whip, and soup
- Add Chicken breasts and close the lid
- Once the chicken and rice has cooked, and rice is tender – about 25 minutes – add milk and stir in
- Add a slice of tomato to each breast of chicken and a slice of mozzarella
- Place the lid back on and allow tomatoes to get tender and let cheese melt – just a couple more minutes
