We all need these easy-to-make-on-the-stove-top dinners for our busiest nights. I love that this is all done in one skillet. It means: fewer dishes to clean.

Ingredients

  • 6 oz. Ben's Original Long Grain & Wild Rice or something similar
  • 1 tbsp. Butter – Use the rice packet’s measurement guide
  • 2&1/4 cup Water
  • ¼ cup Miracle Whip
  • 15 oz. Cream of Mushroom Soup
  • 1 Tbsp butter
  • 3 Chicken Breast
  • ¼ c Milk
  • 1 tomato
  • 3 Mozzarella Cheese Slices
  • 6 oz. mushrooms canned

Instructions

  • Using a large skillet, add the contents of the rice packet with the butter and water suggestion on the package of rice
  • Stir in the miracle whip, and soup
  • Add Chicken breasts and close the lid
  • Once the chicken and rice has cooked, and rice is tender – about 25 minutes – add milk and stir in
  • Add a slice of tomato to each breast of chicken and a slice of mozzarella
  • Place the lid back on and allow tomatoes to get tender and let cheese melt – just a couple more minutes
