We don’t always indulge ourselves with a soda treat, but Root Beer Floats are a summertime tradition.
This year, we added a new twist to one of our favorite ice cream desserts and turned it into a popsicle.
The kids all agreed – They taste just like a Frozen Root Beer Float.
What Goes Into a Root Beer Float?
- 1 or 2 scoops of vanilla ice cream and root beer
How do you Make a Root Beer Float?
- In a tall glass, place 1 or 2 scoops of vanilla ice cream. Pour root beer over the vanilla until the glass is full. Eat with a spoon and when it is all melted – drink the creamy mixture

Tips and Tricks for this Homemade Popsicle:
- I’ve had comments that say you can substitute milk for the ice cream
- Another reader commented that she has always used sweetened condensed milk in place of the ice cream and a splash of vanilla extract – yum!
- Allow the bubbles to settle before adding more soda to the mold. Do this a few times until the mold is about halfway filled with soda
- Let the popsicles freeze for at least 2 hours or overnight

Fun and easy summer dessert treats for the kids
- Prep Time: 5 minutes
- Cook Time: 2 hours - freezing
- Total Time: 0 minute
- Yield: 6-8 servings
Ingredients
- Vanilla Ice Cream
- Root Beer
- Popsicle Molds or disposable cups
Instructions
- Let vanilla ice cream soften and melt a little bit
- Pour the semi-melted vanilla ice cream into the bottom of the popsicle – about 1/2 of the way up
- Add soda until the fizz reaches the top
- Let the fizz settle down and add more soda until the molds are filled up halfway with soda
- Place lids onto the popsicles or clear wrap with popsicle sticks inserted into the middle of the mold
