Sounds fancy, right? It’s so not fancy, and it’s so simple to make. I happen to think this would be a big hit on game day! Oh man, is it delicious. I’m pretty sure that my sandwich lasted on my plate for exactly 3.2 seconds before I devoured it.

Shrimp is a favorite in our house. I’m always on the lookout for shrimp recipes. This recipe was inspired by a fried shrimp po’ boy with tartar sauce. I’m not huge into frying my food, so this is my little twist on the delicious looking sandwiches that caught my eye in my old Family Circle Magazine.

The dressing is super simple and the shrimp can be grilled with a little salt and pepper seasoning, or even sauteed in olive oil. Either way is easy, peasy. 

Here’s the recipe for ya:

Delicious shrimp sandwich

Ingredients
  1. 2 tsp. of cajun seasoning
  2. 1/2 cup of mayonnaise
  3. 1/4 cup of roasted red peppers, drained
  4. 1 tsp. garlic powder
  5. 1/4 tsp. onion powder
  6. 1 Tbsp. olive oil
  7. 1 lb. uncooked shrimp deveined with shell and tail removed
  8. salt and pepper to taste
  9. sliced tomatoes
  10. romaine lettuce rinsed and cut into sandwich size
  11. hoagie rolls
Instructions
  1. In a small blender, add the seasoning, mayonnaise, peppers, garlic and onion powder
  2. Blend until smooth and creamy
  3. In a pan over med/high heat, add the olive oil and warm
  4. Add the shrimp
  5. Shake a little salt and pepper over the shrimp
  6. Continue to cook shrimp, tossing occasionally until shrimp turns pink
  7. Place the opened hoagie rolls under the broiler for about 1-2 minutes to lightly toast the inside
  8. Remove rolls, and spread aioli on one side
  9. Add tomatoes, lettuce and shrimp
  10. Enjoy!
Notes
  1. Another optional ingredient that would compliment this sandwich would be thinly sliced red onion 🙂
