Rainbow Marshmallow Pops – Easy Marshmallow Pops
Holiday recipes like this St. Patrick’s Day recipe are my favorite kind of recipes to make. Having fun party treats like this for kids is such a fun thing to do. I especially love them when they are easy to make, have a long shelf life, and are adorable. Rainbow treats are not just for St. Patrick’s Day. Whatever fun rainbow party you have in mind, this would be a great rainbow party treat. Just like these awesome rainbow Chocolate Covered Strawberries, Rainbow sugar cookies, and a Rainbow Jell-O Poke Cake {seriously delicious!}
With fun spring colors and summer vibes, these delicious marshmallow pops are sure to delight any kid or adult at the party. A quick little bite that’s portable and a delicious snack, too!
I think that these rainbow pops would be a nice addition to any St. Patrick’s Day, spring, or summer party. Why wait for an occasion though? They are ready in minutes and ready to enjoy – just for fun!
If you haven’t worked with melting chocolate before then, let me give you some pointers
Tips and Tricks on melting chocolate melts or chocolate bark…
- if you are microwaving your chocolate – use a glass shallow microwave-proof bowl to heat the chocolate in
- you don’t have to use all of the melts at once – pour some out and melt them. When you need more, just add more, and repeat
- wax paper is a great tool in the kitchen when working with sticky chocolate – set anything chocolate covered on wax paper for easy transfer
- silicone spoons or spatulas are wonderful for stirring sticky chocolate with
- I like to place my chocolate melts into the microwave for 1 minute and stir until smooth. If necessary, I’ll add another 30 seconds in the microwave – but never more than that
- if chocolate overheats – it becomes too difficult to work with. It thickens up and makes a big mess. You can add a little bit of coconut oil or lard (just a smidgen) to loosen it up but it will take longer to harden and will remain somewhat soft
Storing and Make-Ahead:
- marshmallow pops should be stored covered in an airtight container at room temperature
- these marshmallow pops when stored properly can be made up to a week in advance
- do not store chocolate covered marshmallows in the refrigerator as the condensation will impact the texture and flavor

- 11-12 oz. of white chocolate (melting chocolates)
- rainbow sprinkles – I used small non-perils but you can use the jimmies
- paper straws – I love the rainbow paper straws that I found on Amazon. I’ll share a link for you, below. You might be able to find them in the cake aisle of your favorite craft store, as well.

How do you make chocolate-covered marshmallow Pops?

- melt chocolate until smooth
- place straws into marshmallows
- set out wax paper
- dip marshmallows into melted chocolate and spin until coated all of the way around (you don’t have to coat the entire length of the marshmallow. That is totally your call.)
- let the excess drip off
- immediately add sprinkles
- place on wax paper to dry
Note *If you are making marshmallow pops that will be turned so the marshmallow is at the top – unlike mine in the image where the marshmallow rests on the counter, then you can use a styrofoam block to hold your marshmallows in. Just push the straw or lollipop stick that you used to make your pops into the block for drying and holding your creations.

- wax paper

Ingredients
- 12 oz. white melting chocolate
- 24 marshmallows regular sized
- 3 oz. rainbow non pareils – I used small non-perils but you can use rainbow jimmies sprinkles
Instructions
- melt chocolate until smooth
- place straws into marshmallows
- set out wax paper onto your work surface
- dip marshmallows into melted chocolate and spin until coated all of the way around (you don’t have to coat the entire length of the marshmallow. That is totally your call.)
- let the excess chocolate drip off
- immediately add sprinkles by sprinkling them on while spinning the chocolate covered marshmallow
- set upright on wax paper to dry
