Should I peel carrots before cooking them?
- Although it’s not necessary to peel carrots, it does make them more aesthetically pleasing. If you choose not to peel them, make sure that you clean them really well

You’ll Need:
- 2 lbs. of whole carrots
- 2 Tbsp. of olive oil
- 3/4 tsp. of sea salt
- 1/4 tsp. of ground pepper
- Optional – minced fresh parsley for looks
Ingredients
- 2 lbs. of whole carrots
- 2 Tbsp. of olive oil
- ¾ tsp. of sea salt
- ¼ tsp. of ground pepper
- Optional – minced fresh parsley for looks
Instructions
- Preheat the oven to 400 degrees
- In a small bowl, mix the oil, salt, and pepper
- Pour the mixture into your roasting pan
- Place the whole carrots, into the roasting pan and toss them
- *the easiest way is to use your hands
- Bake for 25-35 minutes, or until browned and tender
- Optional Serving Suggestion – Toss with minced fresh parsley (it looks pretty that way)
Notes
- you can cut the carrots into small pieces to make them even more tender
- for a sweeter version, whisk in a little honey into the liquid mixture
