One-Pot Beef Stroganoff

This is one of those dinners that really only requires what you probably already have in your pantry. There’s nothing fancy about it. Just simple and delicious home cooking. 

Another bonus…It comes together very quickly, too. Less time in the kitchen always makes me a happy camper.

Ground Beef Stroganoff Recipe

Ingredients

  • 1 lb. of ground beef – I like to get ground sirloin
  • 1 medium sweet onion – like vidalia – chopped
  • 2 cups of beef broth
  • 1 can of cream of mushroom soup
  • 1 cup of milk – divided
  • 4 cups of uncooked wide egg noodles
  • 1 cup of sour cream
  • 1 (6oz.) can of sliced mushrooms (drained)

Instructions

  1. brown the ground beef along with the chopped onion and drain any fat left in the pan – If you use sirloin, there won’t be that much to drain
  2. Add broth, soup and 1/2 cup of the milk – mix well. A whisk works well in this case
  3. Cover and heat to boiling
  4. Reduce heat to a low boil
  5. Add the noodles, sour cream and mushrooms – stir in and cover
  6. Cook until noodles are tender (about 10 minutes)
  7. Add the rest of the milk and mix in
  8. Serving suggestion – Serve with warm bread slices

Notes

  • For an even creamier sauce – You can substitute heavy cream for the milk

    My kids LOVED this meal! I have the fussiest eaters on this planet and honestly thought this would be another dinner I make which they would complain about it every step of the way and refuse to eat. I used fresh mushrooms instead of tinned ones but they even came back for seconds! what is this magic? Saving this for the future as it will now be a regular!
