I paired the shrimp and sweet potatoes with a delicious couscous. It was the first time my 6 year old had ever tried couscous. He couldn’t stop eating it. I love it when they expand their taste buds!
Shrimp & Sweet Potato Skewers
Delicious grilling recipe
- Prep Time: 30
- Cook Time: 5
- Total Time: 45
Ingredients
- 3 medium sweet potatoes, peeled and cubed
- 3 Tbsp. olive oil, divided
- 1/2 tsp. of Italian Seasoning
- 3/4 tsp. of Paprika divided
- 2 bags of frozen shrimp – peeled, deveined and thawed
- 1/4 tsp. sea salt
- 1/8 tsp. ground pepper
- 4&1/2 tsp. lemon juice + 1 tsp. sugar mixed
- Hot couscous
Instructions
- Preheat the oven to 450 degrees
- Mix 1 Tbsp. of olive oil with Italian Seasoning and 1/2 tsp. of the Paprika
- In a large bowl toss the sweet potato pieces with the oil and seasonings
- Lay out on a baking sheet and bake for about 30-40 minutes or until tender
- If you are using wooden skewers, go ahead and get those in a bowl of water to soak through or use metal skewers to thread the roasted potato pieces with shrimp – alternating
- Sprinkle with salt and pepper
- Grill for about 5 minutes, turning halfway – or until shrimp is pink and cooked through
- In a small bowl, mix the lemon juice, sugar, remaining olive oil and paprika
- Serve the skewers with juice or drizzle over cooked skewers on a platter and serve
- Serving Suggestion: serve with couscous
Notes
- I used a pre-flavored couscous – Garlic and herbs. This really added to the depth of the meals flavor. If you can find a box of flavored couscous, I recommend it. 🙂
