Shrimp & Sweet Potato Skewers Recipe

I can’t wait to share this amazing recipe for Shrimp & Sweet Potato Skewers. It’s so absolutely delicious, and even better the next day! Of course, that is, if you manage to save some. I paired the shrimp and sweet potatoes with a delicious couscous. It was the first time my 6 year old had ever tried couscous. He couldn’t stop eating it. I love it when they expand their taste buds!

Shrimp & Sweet Potato Skewers

Delicious grilling recipe

Ingredients

Scale
  • 3 medium sweet potatoes, peeled and cubed
  • 3 Tbsp. olive oil, divided
  • 1/2 tsp. of Italian Seasoning
  • 3/4 tsp. of Paprika divided
  • 2 bags of frozen shrimp – peeled, deveined and thawed
  • 1/4 tsp. sea salt
  • 1/8 tsp. ground pepper
  • 4&1/2 tsp. lemon juice + 1 tsp. sugar mixed
  • Hot couscous

Instructions

  1. Preheat the oven to 450 degrees
  2. Mix 1 Tbsp. of olive oil with Italian Seasoning and 1/2 tsp. of the Paprika
  3. In a large bowl toss the sweet potato pieces with the oil and seasonings
  4. Lay out on a baking sheet and bake for about 30-40 minutes or until tender
  5. If you are using wooden skewers, go ahead and get those in a bowl of water to soak through or use metal skewers to thread the roasted potato pieces with shrimp – alternating
  6. Sprinkle with salt and pepper
  7. Grill for about 5 minutes, turning halfway – or until shrimp is pink and cooked through
  8. In a small bowl, mix the lemon juice, sugar, remaining olive oil and paprika
  9. Serve the skewers with juice or drizzle over cooked skewers on a platter and serve
  10. Serving Suggestion: serve with couscous

Notes

  • I used a pre-flavored couscous – Garlic and herbs. This really added to the depth of the meals flavor. If you can find a box of flavored couscous, I recommend it. 🙂
