I love Mexican-themed meals. They are one of my favorite types of cuisine. Some of our favorites are this Taco Bake Recipe, or my recipe for Cornbread Mexican Casserole which goes great with any kind of Mexican dish.
When I see a Mexican dish in an old recipe book, I’m all in. I love, love, love any type of Mexican food. The family has no choice, but to love it along with me. This Mexican Noodle Casserole is definitely a new favorite.

Make-Ahead and Storage:
You can make this casserole a day in advance. Just cover with foil and refrigerate until ready to bake. You may need to increase the baking time by about 10 minutes.
Storing leftovers – Store any leftovers covered in the refrigerator for up to 3 days. Reheat by baking or in the microwave until warmed through

This Mexican Spaghetti Recipe – A Taco Pasta Bake Dish that’s layered with delicious Mexican flavors, ground beef, tomatoes, spaghetti, and melted cheese.
Mexican Spaghetti is very similar to taco spaghetti. Both have beef, taco seasonings, cheese, spaghetti noodles, and add-ins such as tomatoes, corn, Rotel, and soups. Some are cooked on the stovetop in a pan with the cheese mixed right in. This Mexican Spaghetti is much like a casserole and is layered with cheese and baked until heated through.
Are you ready to make this Mexican pasta dish? Let’s make sure that you have all of the ingredients that you’ll need:
- ground beef – -sirloin is my preferred
- chopped sweet onion
- green pepper chopped
- cream-style corn
- tomato soup
- tomato sauce
- mushrooms
- salt
- ground black pepper
- chili powder
- shredded cheese – Mexican blend
- 1 (8 oz.) package of spaghetti noodles
- Optional toppings – sliced olives, tomatoes chopped, sliced green onion, avocado sour cream, green chiles, jalapeno, and fresh cilantro
How do You Make Mexican Spaghetti?
- In a large skillet brown the ground beef along with the onions and pepper
- Drain the grease, if necessary
- Stir in the corn, soup, sauce, drained mushrooms, and spices
- Simmer over medium heat for about 15 minutes
- While that is simmering, cook the spaghetti noodles and drain
- Add the noodles
- Layer a casserole dish with noodle mixture and cheese
- Bake in the oven at 350 degrees for about 30 minutes

Mexican Noodle Casserole
Ingredients
- 1 lb. ground beef
- 1 cup sweet onion chopped
- 1 green pepper chopped
- 1 15 oz. cream style corn
- 1 15 oz. tomato soup
- 1 8 oz. tomato sauce
- 1 8 oz. mushrooms (drained)
- ½ tsp. salt
- ½ tsp. ground black pepper
- 2 tsp. chili powder
- 2 cups shredded cheese – Mexican blend
- 1 8 oz. spaghetti noodles
- Optional toppings – sliced olives tomatoes chopped, sliced green onion, sour cream
Instructions
- Preheat the oven to 350 degrees
- Brown the beef, along with the onion and green pepper
- Drain any extra grease from the pan
- Add everything but the cheese and noodles
- Simmer for about 15 minutes
- Cook and drain the noodles
- Add the cooked noodles to the meat mixture
- In a 3 quart casserole dish layer the meat mixture with the cheese – first meat, then cheese, meat and finally cheese on top
- Bake for about 30 minutes
- Serve with toppings of choice
