Blueberry Cobbler with a biscuit topping

Old-Fashioned Blueberry Cobbler with a Biscuit Topping. A Refreshing Summer Dessert!

Ingredients

  • 3/4 cup of sugar
  • 1 tsp. cornstarch
  • 1 cup of water
  • 3 cups of blueberries
  • 1/2 Tbsp. of butter
  • 1/2 tsp. cinnamon
  • 1 cup of all purpose flour
  • 1 Tbsp. sugar
  • 1&1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 Tbsp. shortening
  • 1/2 cup of milk

Instructions

  1. In a medium saucepan, combine the sugar and cornstarch
  2. Add the water, and cook until boiling
  3. Boil for about a minute or until the mixture thickens a bit
  4. Add the blueberries
  5. Pour into a 1&1/2 qt. casserole dish
  6. Put little dots of butter around the blueberries, and sprinkle with cinnamon
  7. In a small bowl, combine the flour, sugar, baking powder, salt, and shortening
  8. Use a fork to mix everything together until the dough is divided into coarse crumbles
  9. Add milk, and stir until doughy
  10. Spoon the dough onto the top of the blueberries in several places
  11. Bake at 400 degrees for about 30 minutes
  12. Best if served warm
  13. Optional toppings – whipped cream, or vanilla ice cream
