After a long winter and what seems like a forever spring, it’s finally summer in the Midwest, and we are ready to add some vibrant colors to our food like in this beach day cookie, these snow cone summer cupcakes, and these fun Rice Krispies flip-flops treats.
These mini popsicle cupcakes scream summertime. They are fun, colorful, and ready for any summer party or summer birthday celebration.

Ingredients

- Cupcakes baked and cooled
- Frosting – I’ll include my recipe for buttercream frosting, but you can easily substitute it with your favorite frosting recipe or use store-bought.
- Mike and Ike’s – This candy is the perfect shape, resembling summer popsicles. They come in a variety of flavors and colors.
- Sprinkles – I used tiny round rainbow sprinkles, but any colorful jimmies sprinkles would look so cute
- Toothpicks – These will be used as popsicle sticks

How to Make Popsicle Cupcakes
Pipe frosting onto cupcakes.

Add some colorful sprinkles to each cupcake
Make popsicles by cutting toothpicks in half and pushing them into the center of Mike and Ikes.


Match up two Mike and Ike Popsicles and place them together in the center of the cupcakes

Expert Tips
If frosting is too thin, refrigerate it for 5-10 minutes to help it firm up a bit.
Variations
Lemonade Stand: Make lemon flavored cupcakes, frost with yellow frosting, add yellow sprinkles and use only yellow Mike and Ikes
Strawberry Shortcake: Make strawberry flavored cupcakes, add vanilla frosting, red and white sprinkles, and only red Mike and Ike popsicles
Fourth of July Patriotic Cupcakes: Use white frosting, red,white, and blue sprinkles, and only red and blue Mike and Ike popsicles
