- Casseroles that are baked with cooked ingredients are typically cooked without a lid. If your casserole requires a lid for cooking, foil may be used a substitute for a lid
Do you need to precook chicken for casseroles?
- Not all casseroles require precooked chicken. If the chicken is not cooked then you will most likely need to cook the casserole for an extended period of time and a lid will probably be required
Tips and tricks for Chicken Casseroles
- quick cooked chicken can be obtained by boiling boneless chicken breasts. Season the water with some salt and pepper. Boil until chicken juices run clear, cool and chop
- Cheese is always a great addition to chicken and rice casseroles. Simple sprinkle shredded cheddar cheese on top of the casserole or just under the breading layer before baking
- Use leftover chicken or rotisserie chicken in casseroles
- Mustard powder and chili powder are a great way to add heat to casseroles
- Add vegetables like frozen carrots, peas and broccoli
- Add crunch to the top with bread crumbs, potato chips, nuts, tator-tots and onion crisps
- Use wild rice in place of white rice

Chicken and Rice Casserole with Potato Chip Topping
Ingredients
- 4 cups cooked white rice cooked
- 4 cups chicken breast cooked and cubed
- 2 green onions – sliced
- 1 8 oz. water chestnuts drained
- 1 10 oz. frozen peas
- ¾ cup celery – sliced
- 1 10 oz. cream of celery soup
- 1 10 oz. cream of chicken soup
- 1 cup mayonnaise
- 2 tsp. lemon juice
- 1 tsp. salt
- 1 tsp. onion powder
- 2 cups potato chips crushed
- optional: paprika seasoning
Instructions
- Preheat oven to 350 degrees
- Grease a 9 x 13 inch baking dish
- In the dish – combine rice, chicken, onion, chestnuts, peas and celery
- In a large bowl, combine soups, mayonnaise, lemon juice, salt, and onion powder
- Pour over the chicken mixture and toss to coat
- Sprinkle with potato chips and optional paprika
- Bake 1 hour
Notes
- I think shredded cheddar cheese would be a fabulous addition to this casserole – add to the top before the chips
- Add more crunch by mixing in slivered almonds or chopped pecans
