Are you ready for the back to school madness? We have one week left of summer, and my head is spinning. I’ve even popped up in the middle of the night with “to do” items on my mind. I tell you, I can’t go back to sleep until I write them all down to put my mind at ease. And, where do I put my list so I remember? You got it! Right next to the coffee pot! Back to school season is just too much for my brain to comprehend. I have to say, this summer is hard to give up, too. My kids are growing up so fast. I am relishing every night we’ve had around the back yard fire pit. With so many memories like ghost stories, or just chit chats around the fire…It’s sad to see them go. That’s why I’m bringing the fun of S’mores around the fire inside for after school snacks and late night chats. Come on in, and I’ll share my recipe for these Scrumptious Cinnamon Toasters Cereal S’mores Drops! You’ll love how simple these are to make and the fun you’ll have in sharing them with friends and family.

I can’t wait to have friends over for S’mores Drops. It will be nice to have the taste of S’mores around the fire without having to find everything for actual S’mores. Of Course, I’ll have to make a new batch. All 20 of these babies are already gone. They didn’t last long!

Luckily I just stocked up on the cereal I need to make them.  I found all of these Post products at my local Walmart. Post has such a nice variety. The whole family was able to pick their favorite! I can’t tell you how happy the kids were to have Fruity Pebbles back in their life!  I had no idea that I was holding out on them.

Please tell me that I’m not the only one that needs cereal in their life. Just the other night, with an impending neighborhood garage sale, and dinner time fast approaching…cereal came to the rescue. It doesn’t happen that often, but when I have kids running up to me saying they are hungry and I’m up to my elbows in old clothes, it’s a life saver!

The cereal I chose for this yummy snack is Cinnamon Toasters. It is the perfect substitute for a graham cracker and makes these S’mores Drops irresistible. I love that it comes in a value bag. With six mouths to feed in my household, that’s a major plus. And, check this out! It has a resealable zipper! Do your kids rip the cereal boxes open to utter destruction, like mine do? When I go to pour cereal, I have to make sure it’s not going to end up all over the floor. I love this bag!

Enough of my rambling on. Let me show you how to make this simple treat so you can bring the fun of S’mores around the fire inside, too! 

Here’s what you’ll need for this Cinnamon Toasters Cereal S’mores Drops Recipe:
Oh! I almost forgot…This makes about 20 S’mores Drops.

  • 4 cups of Cinnamon Toasters Cereal

  • 1&1/2 cups of mini marshmallows

  • 1 cup of chocolate chips – I used milk chocolate, but you can use your favorite flavor

  • 1/3 cup of corn syrup

  • 1 Tbsp. of unsalted butter

  • 1/2 tsp. of vanilla extract

  • Ice cream scoop

  • Wax paper

  • Grab yourself a big bowl and pour in the cereal and marshmallows – mix well
  • In a medium, microwave proof bowl, add the chocolate chips, syrup and butter
  • Microwave for 1 minute, take out and stir then pop back in the microwave for 30 more seconds
  • Stir until smooth
  • Pour chocolate mixture over the cereal mixture and mix it all together

Here’s a nice kitchen hack tip for you – spray your utensils with cooking spray before dipping them into sticky stuff or measuring out something sticky, like syrup

  • Use an ice cream scoop to scoop out the S’mores Drops onto a sheet of wax paper
  • Let cool and Enjoy!

When we can find the time, I’ll  squeeze  in more backyard fires. The S’mores drops will definitely make an appearance to those! When we can’t find the time or energy to stay up around a backyard fire, we’ll just enjoy our chats around the table with our fun snack. Either way, memories with the kids even well into the school year are covered now!
