Also, be careful not to over mix when combining with the dry ingredients. You want to mix until wet and that’s it. Adding baking soda also helps pancakes create air pockets and rise. You can add 1 tsp. of baking soda to the dry ingredients.

- In a large bowl, mix the dry ingredients

- When ready, melt a dab of butter on your iron skillet or griddle

Can you premix this (wet and dry together) before you go on your trip?
I would not recommend adding the wet ingredients to the pancake mix until you are ready to make them. I know that stinks. I’m always looking for shortcuts, but the water will activate the ingredients that make the dough rise, and then they will fizzle out. Pancake batter only tends to last up to an hour – if that.
