Tips and tricks for your Make-Ahead Pancake Recipe for Camping…

How do you make the pancakes fluffy?

If you want really fluffy pancakes – mix your wet ingredients separately and give them good whisking. The air pockets in the egg help make the pancakes fluffy. Also, be careful not to over mix when combining with the dry ingredients. You want to mix until wet and that’s it. Adding baking soda also helps pancakes create air pockets and rise. You can add 1 tsp. of baking soda to the dry ingredients.

What is the easiest and most convenient way to mix this pancake batter?

If you don’t care about fluffy and are just going for easy and delicious, then mix it all upright in the zip-tight bag! The pancakes will be a little on the flat side, but just as tasty.

How do I get Thicker Pancake Batter?

You’ll want to play around with the amount of water you add. The full 1 cup makes a pretty thin batter. For a thick batter, add less water.

How do I make more batter?

For more pancakes, you can make several bags with the exact recipe, or triple everything in the recipe except the baking powder. Leave that amount as is, and consider adding 2 tsp. of baking soda to the dry mixture for a fluffier pancake.
*The downside of baking soda is the taste it gives off. I can always tell when baking soda is in a recipe, but that’s probably just me

Hi, I’m hoping to make these for my camping trip this weekend. I just wanted to check what type of flour are you using (eg plain/self-raising)? Apologies if it is mentioned above but I couldn’t see it anywhere

    1. Melissa

It isn’t specified in the recipe. Thank you for pointing that out. I made it with all-purpose flour. Have fun camping! 🙂

  2. Christine

Hello there, is that really 12 tsp of baking powder?
    Thank you!

    1. Melissa

Oh my goodness, no! I wonder if I tried to type 1/2. Let me check on this recipe for you and I’ll fix the error.

    2. Melissa

Hi there. I checked the recipe. It states 4 teaspoons of baking powder. I’m not sure where the 12 tsp. is that you are seeing?

      1. Cheryl

It’s 12 T if you multiply the recipe by 3

        1. Cheryl

          Oops meant 12 t!

  3. Julie

Can you premix this (wet and dry together) before you go on your trip?

    1. Melissa

I would not recommend adding the wet ingredients to the pancake mix until you are ready to make them. I know that stinks. I’m always looking for shortcuts, but the water will activate the ingredients that make the dough rise, and then they will fizzle out. Pancake batter only tends to last up to an hour – if that.

    Oops meant 12 t!

    1. Melissa

Oh, Dear! Did I mess something up? I’ll have to go back and double-check the recipe, now.

      1. Melissa

I think I understand what you’re trying to do, and you are right, 12 Tbsp. is an excessive amount of baking powder. If you want to triple the recipe, you’re going to want to keep the baking powder at 4 tsp. Triple everything else, and consider adding about 2 tsp. of baking soda to help the batter rise even more.

        1. Heather

Hi Melissa – in the “how do I make more batter” section under the recipe, you say to triple everything “except the baking powder. Leave that amount as is” which is 4 tsp according to the recipe. But in the reply above you say to keep the baking powder 4 tbsp, which would essentially be the recipe tripled. Which is it? Do you leave it at 4 tsp or 4 tbsp?

          1. Melissa

I think that reader initially stated 12 Tbsp. and I replied with tbsp. by mistake. We had a little back and forth trying to figure out the situation, and I must have had tbsp. on my mind. It should stay at tsp. not tbsp. I will go correct that comment so I don’t confuse anyone else. Thanks for pointing that out.

I thought this looked promising so at home tried it out this morning. Followed directions exactly including whipping the wet stuff then combining into the dry. Was easy and straight forward. Way better than Bisquick. I’ll be doing this in camp next trip out. Thanks.

Awww…Thank you for letting me know you liked it. I always worry when I see a comment and hope it’s a good one. You made my day!
