Easy Turkey Vegetable Tray (A Veggie Turkey for Thanksgiving)

I’ve seen so many adorable turkey veggie tray ideas shared over the years, and people always seem to love them. I’ve been wanting to make one myself, so I finally picked up the supplies and put together my own version. I love how colorful it turned out, especially with the ranch dip tucked right into the turkey’s belly!
I learned a couple of tricks along the way. Getting straight celery sticks to curve around the platter was a little tricky, but trimming some of the ends into points helped everything fit together. I also discovered that building up the center with cucumber slices first made it much easier to arrange the radishes.
We actually enjoyed this turkey veggie tray during one of our family’s charcuterie movie nights while watching Survivor. It was a big hit with everyone! We’ve been snacking on the leftover vegetables for days, and my daughter even appreciated having everything already washed and cut for her birthday snack and craft night.

- Yellow cheese, for the beak and feet

Equipment

How to Make a Turkey Veggie Tray
Step 1: Prepare the vegetables and dip. Cut the celery into sticks and slice the cucumbers and radishes. Mix Hidden Valley Ranch dip mix with sour cream according to the packet directions. Hollow out the orange bell pepper to hold the dip.

Step 2: Make the lettuce base. Spread loose green leaf lettuce around the 15-inch round platter.

Step 3: Add the celery feathers. Arrange celery sticks in a fan, going up around the top and back down the other side. Trim a few ends to a point to fill gaps along the curved feather shape.

Step 4: Add the baby carrots. Fill in the next feather layer with baby carrots, following the fan around the turkey’s body.
Step 5: Set the belly in place. Position the orange bell pepper filled with ranch dip near the bottom center.
Step 6: Build up the body with cucumbers. Layer overlapping cucumber slices above the dip-filled pepper, building a foundation to support the radishes. I originally started adding radishes before the cucumbers and found it worked better to change the order.

Step 7: Fit the radishes around the cucumbers. Tuck sliced radishes around the cucumber body, letting the layers support each other.
Step 8: Make the face. Choose a cucumber slice for the head. Add two sliced olives for the eyes, a yellow cheese triangle for the beak, and a small oval of salami for the wattle.

Step 9: Add the feet and pepper feathers. Cut the feet from yellow cheese. For the curved decorations, slit yellow bell pepper rings, open them into fans, and trim the pieces to fit around the vegetable feathers.

Melissa’s Tips for Making a Turkey Vegetable Platter
Use the shape of the platter as your guide. Celery sticks won’t naturally form a curve, so trimming the ends of a few pieces helps them fit neatly into the open spaces.
Switch directions when you get to the center. I started assembling the vegetables from the outside inward. Once I began adding the radishes, I realized it was easier to set the dip-filled belly in place, build up the cucumbers, and then tuck the radishes around them. That gave the inner layers better support.
Make bell pepper fans. Rather than trying to bend an intact ring of bell pepper around the feathers, cut a slit in the ring, open it up, and trim it to fit the curve you need.

Notes
-
Trim the celery: Cut a few ends into points so the straight celery sticks can fit together around the curved tail.
-
Build up the cucumbers: I initially tried adding the radishes first, but realized layering the cucumbers underneath helped support the radishes.
-
Make bell pepper fans: Cut a slit into a yellow bell pepper ring, open it into a fan, and trim to fit the curved feathers.
