My mom makes at least five trips a year to what we call, Amish country. Shipshewana, an Amish community is very near to our home.

This is our favorite Amish bread recipe. It is easy to adapt 2 loaves of bread, into mini loaves or soft dinner rolls.

We usually only enjoy this bread during holiday dinners or Sunday roast. Today, I thought I’d share the recipe with you so you can start enjoying this delicious bread with your family.

Why do Dinner Rolls sometimes come out too hard and dense?

  • One possible reason for rolls coming out dry and hard could be too much flour. Add most of the flour and reserve some for the end, in case the dough is sticky. Use some of the reserved flour for spreading on your work surface to knead the dough. Another reason would not be kneading it enough. Make sure you knead the dough, folding it in half over and over to create air pockets in your dough which will help keep the bread soft

Why are my rolls hard and flat?

  • Hard and flat rolls could be the result of yeast that is expired or water was too hot and killed the yeast. Another reason that is possible is that the dough wasn’t able to rise enough.

Tips and Tricks for making the perfect soft dinner rolls…

  • cover rising dough with saran wrap to retain heat and moisture
  • fold dough in half while kneading to create air pockets
  • add sugar to the top of dough for a sweeter bread flavor
  • brush melted butter on rolls after baking

Should I brush butter on my bread dough before baking?

  • You can brush butter or oil on dough before baking to give the dough more color and flavor. Brushing with milk will add a golden color and tender texture to your crust. Adding sugar will sweeten your crust

Ingredients

  • 2 cups warm water about 110-115 degrees F.
  • cups sugar
  • 1&1/2 tbsp. yeast
  • ¼ cup oil
  • 1 tsp. salt
  • 5-6 cups flour all-purpose

Instructions

  • In a large bowl, with a whisk – Mix water, sugar and yeast until dissolved
  • Add salt and oil
  • Mix in the minimum flour amount and mix in the extra cup as needed – dough should still be a little sticky during the first rise

  • Knead until smooth and elastic

  • Cover dough with clear wrap and place in a warm place to rise for one hour or until doubled
  • Punch down. Divide in half
  • Roll into 24 rolls and place in greased baking pan (pan should be about 9×13)

  • Cover again and let rise for 1 hour or until doubled

  • Bake in a preheated 350 degrees for 20-25 minutes on the middle rack of the oven

  • Rolls should be golden on top and cooked through

Notes

Water temperature for yeast:
  • water should not be boiling. It should be hot but you should be able to touch it without it being too hot for touching
