These Chewy Oatmeal Bars are pull-apart chewy and so delicious. A great way to start the day or make them for after-school snacks. They are a great snack to take to picnics, holidays, and get-togethers.
Chewy Oatmeal Bars {Chocolate Chip}
These are so delicious…I have to hide them from myself. Don’t get me wrong, I love baking cookies for the kids, but when you can just bake one batch, and DONE… I’m all over it!

Make-Ahead and Storage:
These chewy oatmeal bars can be made 3-4 days in advance.
Store them in an airtight container at room temperature.
Freezing:
You can freeze oatmeal bars by wrapping them individually in wax paper and storing them in a freezer bag. Thaw at least one hour before eating.

- M&Ms
- Nuts – chopped walnuts or pecans would be delicious
- cinnamon spice
- dried fruit like cranberries or cherries
- pistachio nuts

- 1 cup all-purpose flour
- 1/2 c of unsalted butter
- 1/2 cup of brown sugar
- 2 eggs
- 1 cup of brown sugar
- 2 T. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1&1/2 tsp. vanilla
- 1 cup of chocolate chips
- 1 cup of quick oats
Chewy Chocolate Chip Oatmeal Bars
Ingredients
Crust
- 1 cup flour all-purpose
- ½ cup butter unsalted
- ½ cup brown sugar
Filling
- 2 Tbsp. flour
- 1 tsp. baking powder
- ½ tsp. salt
- 2 eggs
- 1 cup of brown sugar
- 1&1/2 tsp. vanilla
- 1 cup chocolate chips
- 1 cup quick oats
Instructions
- Preheat oven to 350 degrees
- Mix the first flour, unsalted butter, and 1/2 cup of brown sugar, and spread out into an ungreased 9×13 pan
- Bake that for 10 minutes
- While that is baking, In a large bowl – mix 2 Tbsp. of flour, baking powder, salt
- add the eggs, 1 cup of brown sugar, and vanilla
- Pour that over the baked crust
- Sprinkle the chocolate chips, and oatmeal on top
- Bake for 20-25 minutes
- When they cool off, slice into bars
