Are you ready to make these easy Minnie Mouse Cupcakes? Let’s make sure you have everything you need…

Ingredients You’ll Need:

  • Cupcakes
  • Pink cupcake wrappers – I love the firm paper (affiliate links) cupcake wrappers that I found on Amazon
  • Pink frosting – I bought some pink Funfetti frosting. The pink frosting is usually available around holidays like Valentine’s Day and Easter.
  • Oreo Cookies – or the store-brand version
  • Red Fruit Roll-Ups – with no writing or pictures printed on (hard to find these days)
  • optional: powdered sugar

Other Equipment: 

  • piping bag with a star tip

Make-Ahead and Storage:

You can make these cupcakes a day in advance. The only reason that I wouldn’t make them earlier than that is because of the fruit roll-ups – once they are exposed to air they might lose their softness and elasticity.

Store leftover cupcakes in an airtight container at room temperature for up to three days.

Tips and Tricks for making this Minnie Mouse Cupcake

  • make sure your house is not too humid or hot when decorating with frosting. A hot temperature house can start to melt the thickening agent and it will be hard to work with. Don’t worry though, there are easy fixes to this problem
  • if your store-bought frosting is too thin to pipe or hold the weight of the cookies – use powdered sugar to thicken it up. Add 1 tbsp. at a time until thick enough
  • Another option for holding cookies is to make them into cupcake toppers with toothpicks. Toothpicks can be inserted into the cupcakes to hold the cookies, but as you probably already know…just be careful to let your guest know to remove the toothpicks before eating 
  • Use a star tip to frost cookies. Start in the center of the cupcake by making a circle and keep going around in bigger and bigger circles until you’ve reached the edge

Equipment

  • piping bag with star tip

Ingredients

  • 24 Cupcakes
  • 16 0z. Pink frosting before you put it in the piping bag make sure it is stiff enough to hold your decorations. Check out the notes below…
  • ½ cup powdered sugar amount may vary
  • 18 oz. Oreo Cookies
  • 13 oz. Fruit by the foot with no writing or pictures printed on hard to find these days

Instructions

  • Place cupcakes in pretty pink cupcake wrappers
  • Mix pink frosting with enough powdered sugar to make it thick enough to hold decorations. If it is oily and thin, the ears and bow will slide right off. Start with 1/4 cup and add more as needed to make it a buttercream like consistency
  • Fill the piping bag with frosting
  • Using your piping bag filled with pink frosting, frost the cupcakes

Decorating:

  • You’ll want to unwrap your red roll up, and cut a strip about 6 inches in length – if you have to piece two pieces together because you couldn’t find just plain red (it happens) then use a dab of water to make them seal together

  • Start by folding the ends of the fruit roll-up toward the center. Pinch the middle of the fruit rollups in between your thumb and finger

  • Take another strip about 2 inches long – this will be the middle of the bow

  • Fold the small strip in half so it is narrow and long
  • Wrap this around the middle of the bow and pinch them back to seal

  • Add some frosting to the bottom of the Oreo cookies and push them onto the middle of the cupcake

  • Place your bow in front of the Oreo cookies

Notes

Are your cookies falling off of the cupcake?
Your frosting could be too thin. It should be stiff and not oily. You can test it by scooping some out with a silicone spatula and holding it upside down. Does it form a stiff curve? If it doesn’t have a curve or melts right off, then it’s too thin
  • If you made homemade frosting, add some more softened butter or whatever you used as a thickening agent (like cream cheese) to thicken it for piping
  • you can thicken store-bought frosting with powdered sugar (add 1 Tbsp. at a time until it is your desired consistency) or use toothpicks inserted into the cupcake to hold the cookies in place (be sure to let your kids know to remove any toothpicks before eating their cupcakes)
