Mexican Noodle Casserole Recipe

When I see a Mexican dish in an old recipe book, I’m all in. I love, love, love any type of Mexican food. The family has no choice, but to love it along with me. This Mexican Noodle Casserole is definitely a new favorite.

  1. 1 lb. of ground beef
  2. 1 cup of chopped sweet onion
  3. 1 green pepper chopped
  4. 1 can of cream style corn
  5. 1 can of tomato soup
  6. 1 (8 oz.) can of tomato sauce
  7. 1 (8 oz.) can of mushrooms
  8. 1/2 tsp. of salt
  9. 1/2 tsp. of ground black pepper
  10. 2 tsp. of chili powder
  11. 2 cups of shredded cheese - Mexican blend
  12. 1 (8 oz.) package of noodles
  13. Optional toppings - sliced olives, tomatoes chopped, sliced green onion, sour cream
  1. Preheat the oven to 350 degrees
  2. Brown the beef, along with the onion and green pepper
  3. Drain any extra grease from the pan
  4. Add everything but the cheese and noodles
  5. Simmer for about 15 minutes
  6. Cook and drain the noodles
  7. Add the cooked noodles to the meat mixture
  8. In a 3 quart casserole dish layer the meat mixture with the cheese - first meat, then cheese, meat and finally cheese on top
  9. Bake for about 30 minutes
  10. Serve with toppings of choice
