Easter bunny cupcakes

When I’m planning out Easter treats for the kids, I like to keep it simple like I did with these fun Easter cupcakes and some of my other Easter party foods, like these bunny ear cupcakes, fudge bunny cookies, and lamb rice krispies treats.

This cupcake is colorful, adorable, and simple to make—the perfect last-minute Easter treat for your Easter celebration.

Why I Love this Recipe

What I love about this recipe:

  • KID FRIENDLY – Making this cupcake is so easy that the kids can even help.
  • BEAUTIFUL – This cupcake will wow your guests with its’ lovely grass frosting, nestled eggs, and golden bunnies.
  • EASY – This cupcake idea uses a boxed cupcake mix, pre-made frosting, and store-bought candies that are easy to find.

Ingredients You’ll Need

Easter cupcake ingredients
  • White Cake mix plus ingredients listed on the box to make cupcakes
  • Green Frosting – I found some pre-colored green frosting at the store, but you can certainly make your buttercream frosting and color it green
  • Chocolate Bunnies—After weeks of searching in February, I finally found Lindt Bunnies. However, I was looking for Ghirardelli chocolate bunnies. Unfortunately, it was too early in the season to find them. The Lindt bunnies are super cute, and I’m very happy with them. I do think any small chocolate bunny or colorful Peeps would be fantastic.
  • Cadbury Mini Eggs

Expert Tip

I like to use foil-lined cupcake wrappers. I feel they hold up better and give a better presentation.

Handy tip: How to Frost with a Grass Tip

Holding in a vertical position, gently squeeze frosting onto the cupcake. Lift the grass tip straight up and stop squeezing. Continue with that pattern all around the cupcake.

Variations

Bunny – Use an unwrapped bunny like Ghirardelli chocolate bunnies or colorful Peep bunnies instead of the Lindt bunny.

Eggs – Use Jelly Beans as Eggs

Flavor – Use any flavor boxed cake or your own cake recipe for this Easter cupcake idea.

What to Serve With

Holiday cupcakes go great on the dessert table along with…

Yes! Some great add-ins include Oreo cookie pieces, chocolate chips, rainbow sprinkles, and nuts.

Doubling gets tricky when it comes to baking recipes. The ingredients that are meant to puff up make the cake rise usually don’t react well when doubling. If you need more cupcakes, I would suggest making another batch.

Storing and Reheating

Store these cupcakes in an airtight container at room temperature for about three days.

Serving Size

A boxed cupcake mix will generally make about one dozen cupcakes.

To make more, you’ll need to make another batch plus add more chocolate bunnies
