This particular cookie bar has a coconut and caramelized center in this chewy bar and is a lethal combination for me. They are delicious and pretty much, irresistible. Coconut Dream Bars
Ingredients
Crust
- ½ cup butter – unsalted
- 1 tsp. salt
- ½ cup brown sugar
- 1 cup flour
Topping
- ½ cup brown sugar
- 1 tsp. vanilla
- 2 beaten eggs
- 2 Tbsp. flour
- ½ tsp. baking powder
- ⅛ tsp. salt
- 1&1/2 cups sweetened coconut flakes (shredded coconut flakes found in the bakery aisle)
- 1/2 cup of nuts chopped – optional
Instructions
- Preheat the oven to 350 degrees
- In a large bowl, mix the crust ingredients together and spread out into a 9×12 pan
- Bake the crust for 15 min.
- In another bowl, mix the rest of the ingredients together and spread over the baked crust
- Bake for another 15 minutes
- Let cool, and cut into bars

Sorry about that. You’ll need what is referred to as sweetened coconut flakes or flaked coconut which can be found in the bakery aisle of most grocery stores.
