These Easy Halloween Eyeball Cookies are the perfect Halloween treat for the kids. I can’t wait to share this recipe with you. Let me tell you, I have had plenty of experience creating this fun Halloween dessert. I had many recipe tests on this one, and wouldn’t you know, I ended up going with my first version. Isn’t that always the case? I love how each eyeball expression changes from one cookie to the next, and you’ll love how easy these are to make.

Ingredients

You’ll Only need a few ingredients for this recipe unless you make homemade chocolate chip cookies which is totally fine to do, but you might need to adjust the baking time to suit your recipe.

  • Chocolate Chip Cookie Dough – I used Pillsbury Cookie Dough. It says right on the package that it’s safe to eat raw. I’ve never noticed that before!
  • Marshmallows – Just your regular sized marshmallows are perfect for this recipe. I would not use jumbo, or mini marshmallows for this cookie recipe.
  • Halloween Candy Eyeball Cupcake Toppers – I would get these exact sprinkles unless you can find some similar candy eyes at your local grocery store. I ordered mine on Amazon a year ago and I use them all of the time.

Equipment Needed

Baking Pan – or as I like to call it a Cookie Sheet

Parchment Paper – This is so important when baking these cookies. The marshmallow will stick to a baking pan, and the cookies will turn darker brown on the bottom without parchment paper.

How to Make Eyeball Cookies

Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper

Cut off a cookie dough section and roll it into a ball about one inch wide.

Place that cookie ball onto the parchment paper and cut it down the middle

Spread the two halves a little bit apart

Take a marshmallow and cut the length of it in half so it is a little bit shorter.

Place the half marshmallow piece in between the two cookie dough halves.

Form a circle around the marshmallow with the cookie dough and press the ends together to seal the edges.

Partially bake the cookies. Bake them for about 8 minutes.

Take them out and place the candy eyes onto the marshmallow center.

Bake for an additional 3-4 minutes.

Take them out and let them cool slightly before transferring them. The middle will be melted marshmallows, so you want to let them harden a bit before moving them.

Pro Tips

I tested this recipe out a lot. Here’s what I learned

You don’t want to add the eye sprinkles at the beginning. They will melt into the marshmallow and literally disappear

I tried to shape the cookies to look like an eye – wider in the center, coming to points at the edges. I’m not sure if it made a difference. Once the cookies start to bake, the shape has a mind of its’ own.

Variations

If you want to add a little more spooky quality, try making bloodshot eyes with an edible red marker.

Do I have to bake the cookie partially?

Yes. Adding the candy eye at the beginning of the baking process will melt into the marshmallow. You don’t want it to dissolve fully, but baking it for a few minutes will allow it to sink into the marshmallow, creating that spooky eye.

Why Do I Need Parchment Paper to Bake Chocolate Chip Cookies?

I have found that parchment paper prevents over-browning of the cookie bottom.

Can I Refrigerate these Cookies to Make them Last Longer?

I would not recommend refrigerating these cookies. The condensation from the fridge will cause the candy eye to take on moisture and the colors will blend together. The marshmallow will also harden too much.
