Easy and Savory Grilled Campfire Potatoes in a Foil Packet. There’s just something wonderful about campfire food. One of my favorites has always been the campfire foil packets of potatoes tender and cheesy – hot off of the grill.
Campfire Potatoes
The kids love getting their very own potato packets. I love seeing how excited they are with this classic campfire recipe. When I was a little girl, my mom was the camp chef. There was jus something special about waking up to camping pancakes, or a western hashbrown casserole in a foil pan. Then finishing the day with apple crisp in a foil packet. Cooking over a fire on cast iron skillets makes everything taste better. Doesn’t it? Oh my goodness…the morning pancakes were the best.

Recipe
Savory Grilled Campfire Potatoes
Equipment
- 6 foil squares 12 inch
Ingredients
- ½ cup Miracle Whip
- 3 tsp. minced garlic cloves
- ½ tsp. paprika
- ½ tsp. salt
- ½ tsp. garlic salt
- ½ tsp. ground black pepper
- 6-8 red potatoes – sliced into 1/4 in. slices
- 1 large vidalia onion sliced
- butter
Instructions
- In a large bowl mix the Miracle Whip and seasonings
- Add the sliced potatoes, and onions
- Toss to coat
- Divide mixture into the foil squares
- Add a small dollop of butter to the top of each potato mixture
- Pull the foil up around the potatoes, and fold to secure on all sides
- Grill over medium heat for 30-35 minutes, or until tender

Can you put these in the oven?
Hi Terri. You can absolutely bake these in the oven. Set your temperature to 375 degrees and bake for 45-50 minutes (or until potatoes are tender and you can pierce them easily with a fork).
Can these be made head? I would think maybe a day or two and kept in the fridge or would you freeze? Thanks!
I haven’t tried making these ahead of time, so I can’t tell you from experience. There are a couple of ingredients that will pose a problem. Unless the potatoes are submerged in water and refrigerated, they will start to brown from the air exposure. The miracle whip when frozen will change texture upon thawing. Because the potatoes would be coated with the Miracle Whip mixture, there is a chance that they won’t brown. I’m nervous to tell you for 100% certain it would work out. The only thing that I can think of that would definitely work and save time is to slice your potatoes then submerge the slices in water and refrigerate. Mix the rest of the ingredients and store them separately in the fridge. The day of, drain the potatoes and toss with the miracle whip mixture and divide into foil packets to grill.
Update. I wanted to answer your question with certainty, so I made a batch of foil pack potatoes last night. I put one in the fridge overnight and just checked. It’s totally fine. The liquid from the mayo mixture kept the potatoes from browning. You should be completely fine making these a day in advance. Fold the foil pack tightly and store in the fridge or transport in a cooler for camping. 🙂 Yay!
