Creamy Cauliflower Soup

Ingredients

- carrot sliced
- celery chopped
- chicken broth
- butter unsalted
- flour all-purpose
- salt
- pepper
- cauliflower head cut into florets
- milk 2%
- cheddar cheese
How to Make Cauliflower Soup
In a Dutch oven, melt 1 tbsp. of butter
sautee onion, carrot, and celery

Add 2 tbsp. of butter and let it melt
Add 3 tbsp. flour

Mix to make a roux
Add milk, broth, salt, pepper, and cauliflower

Bring to a boil, reduce, and simmer for 12-15 minutes
Stir in the cheese until melted

Tips for Making This Soup
This soup is mild and creamy; if you prefer a spicy soup, add crushed red pepper flakes to the broth.
This soup is hearty enough, but serving it with warm rolls and butter will make it even more filling and delicious.
Because this soup has milk, stir it often to prevent the milk from scalding.
Handy tip: Making a Roux
A roux is simply equal parts butter and flour. Your roux should be a pasty consistency. Add your liquid to the roux while constantly whisking it to break up the flour mixture and blend it evenly with the liquid.

Flavor Variations
- Spice: Add some crushed red pepper to the broth. If you are roasting the cauliflower, you can add cayenne pepper to the olive oil for tossing.
- Starch: I think rice would be a delicious addition to this soup—Parboil long-grain rice by cooking it in water for bout 15 minutes. Add the partially cooked rice with the broth and cook for 12-15 minutes.
- Meat: Add the cooked chicken along with the broth
