Ingredients

  • 3 medium sweet potatoes peeled and cubed
  • 3 Tbsp. olive oil divided
  • ½ tsp. Italian Seasoning
  • ¾ tsp. Paprika divided
  • 2 12 oz. frozen shrimp – peeled deveined and thawed
  • ¼ tsp. sea salt
  • â…› tsp. ground pepper
  • 4&1/2 tsp. lemon juice + 1 tsp. sugar mixed

Instructions

  • Preheat the oven to 450 degrees
  • Mix 1 Tbsp. of olive oil with Italian Seasoning and 1/2 tsp. of the Paprika
  • In a large bowl toss the sweet potato pieces with the oil and seasonings
  • Lay out on a baking sheet and bake for about 30-40 minutes or until tender
  • If you are using wooden skewers, go ahead and get those in a bowl of water to soak through or use metal skewers to thread the roasted potato pieces with shrimp – alternating
  • Sprinkle with salt and pepper
  • Grill for about 5 minutes, turning halfway – or until shrimp is pink and cooked through
  • In a small bowl, mix the lemon juice, sugar, remaining olive oil and paprika
  • Serve the skewers with juice or drizzle over cooked skewers on a platter and serve
  • Serving Suggestion: serve with couscous
