Homemade Coca-Cola Cake
Coca-Cola lends its sweet syrup to this Chocolate Sheet Cake and kicks it up a notch with its’ moist chocolate
Did you notice in the photos that some have a thick chocolate frosting shown and others do not? That’s because the first time I made the cake I did not let the Coke for the frosting cook down to 1/2 cup. The frosting was thin and the cake soaked it right up. It was delicious y’all. I mean the taste was amazing, but I wanted a re-do to get that thick chocolate frosting on top. Both were delicious, but the favorite was definitely the thicker frosting. Here’s what I now know about Coca-Cola Frosting…
Tips and Tricks about Coca-Cola Frosting:
- You have to cook that Coke down to 1/2 cup or the frosting will be too thin
- If you cook it down to less than 1/2 cup it will be too thick – then you’ll most likely need to add some Coke to your frosting
- To add Coke to frosting that is too thick, add 1 tsp. at a time until it is the right texture – no need to boil it again
- Pour the frosting onto the cake while it is still hot from the oven
- I’ve added a photo to show you how thick the frosting should look
How Long Will Homemade Chocolate Cake Last?
- If covered and left at room temperature, a homemade cake can last 3-4 days. If covered and refrigerated, a homemade chocolate cake can last for up to 1 week
Tips and Tricks for your Coca-Cola Chocolate Cake
- You can use any brand of Cola for this cake
- When making the glazed frosting, make sure you reduce the cola to 1/2 cup while boiling
- Use unsweetened cocoa powder
- Pour the warm frosting over the warm cake – soon after removing it from the oven
- Some glaze will most likely soak into the cake. This will only add to the moistness of this delicious cake
- In my opinion, this cake tastes better on the second day – after it has soaked up more of the chocolate glaze top

Homemade Chocolate Coca-Cola Cake {Moist & Delicious}
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 tsp. baking soda
- ½ tsp. salt
- ½ tsp. c Optional: 1/2 tsp. of cinnamon optional: refer to notes below
- 12 oz. coca-cola
- 1 cup butter – cubed
- ¼ cup of baking cocoa
- 2 large eggs
- ½ cup buttermilk
- 1 tsp. vanilla extract
Frosting/Glaze
- 1 cup coca-cola
- ½ cup butter – cubed
- ¼ cup baking cocoa
- 4 cups confectioners' sugar
Instructions
- Preheat the oven to 350 degrees
- Grease a 9 x 13 inch baking sheet
- In a large bowl, whisk the flour, sugar, baking soda and salt
- In a medium sized saucepan, warm cola, butter and cocoa
- Bring the mixture to a boil making sure all butter has melted
- Remove from heat and pour into flour mixture – stir until combined with cola mixture
- In a small bowl, whisk eggs, buttermilk and vanilla
- Add to the flour mixture – whisking everything together
- Pour into greased pan
- Bake 25 minutes or until toothpick inserted in the middle comes out clean
While the cake is baking and is almost done (about 15 minutes before it is done baking) prepare the glaze…
- In a medium saucepan, bring 1 cup of cola to a boil
- Boil until it is reduced into 1/2 cup – This should take approximately 10-12 minutes
- Stir in the butter until melted
- Remove from heat and add confectioners sugar – stir until smooth
- Pour over hot cake
Notes
- The glaze can be temperamental. If you don’t reduce the glaze to 1/2 cup, it will be thin. A thinner glaze will soak into the cake more than a thick glaze will and most of your frosting will end up inside the cake. Don’t worry though, the cake will still be delicious
- Cinnamon is optional. I have made the cake with and without it. We prefer the cake without cinnamon. If you think you’d like to try the cake with cinnamon, then mix it in with the flour, sugar, baking soda and salt. I also show it added in the video
