Chewy Oatmeal Bar Cookies

This breakfast bar is buttery, chewy, and full of oatmeal. It’s easy to make, and no mixer is required. This is the perfect recipe for when you want a cookie treat but don’t want to make cookies from scratch. Oatmeal bar cookies are so easy to make. Simply mix, pour, and bake. Easy—Peasy.

Ingredients You’ll Need

  • 1 cup of unsalted butter
  • 1 & 1/2 cup of brown sugar
  • 4 cups of oatmeal
  • 1 cup of coconut flakes
  • 1 cup of chocolate chips
  • One bag of mini marshmallows

How to Make Chewy Oatmeal Bar Cookies

Preheat the oven to 350 degrees Fahrenheit

In a large bowl, mix everything.

Pour into a 9×13″ baking pan and spread out

Bake for 20 minutes

Let the bars cool slightly, but cut into bars while still warm

When it’s first pulled out of the oven, it will seem gooey and will look like it will never stiffen into a bar, but it will. You have to give it some time to set (about an hour)

Expert Tips

I did not do this and wished that I had. Cream the butter and sugar before folding in the rest of the ingredients. I think it will make everything come together a lot faster and smoother.

To avoid the oatmeal sticking to a knife, use a silicone spatula to cut oatmeal bars

Variations

Blueberry Oatmeal Bar Cookies – Replace the chocolate chips with fresh blueberries

Cranberry and Pecan Oatmeal Bar Cookies – use sweetened dried cranberry and pecans in place of chocolate chips

Butterscotch Oatmeal Bar Cookies – Add butterscotch chips in place of chocolate chips

What to Serve With

FAQs

Can I use Quick Oats instead of Old-Fashioned Oats?

Yes. Oats are interchangeable. The only difference you will notice is that old-fashioned oats will be more chewy than a quick oat would.

Storing and Reheating

Store oatmeal cookie bars at room temperature. Covering them will help them retain moisture, but it is unnecessary. They will stay soft and chew for a few days.

    • 4 cups oatmeal quick oats or old-fashioned
    • 1 cup coconut flakes
    • 1 cup chocolate chips milk or semi-sweet
