Delicious Coconut Cake {Using Cake Mix}
Ingredients
- 13 oz yellow cake mix
- 1 cup water
- ⅓ cup oil
- 3 large eggs
- 2 cups of powdered sugar
- 8 oz. of sour cream
- 12 oz. of coconut shavings
- 1 &1/2 cups of whipped cream
Instructions
- Mix cake mix, water, oil, and eggs. Prepare and bake cake according to the box mix – baking it in 2 (8 in.) square or circle pans
- Let cool completely
- Once cooled, slice each baked cake down the middle – horizontally (making 4 layers)
- Blend sour cream, sugar, and coconut
- Spread all but 1 cup of mixture between layers
- With the rest of the mixture, add the whipped cream
- Spread over the sides and top of the cake
- Seal cake in an airtight container or use plastic wrap to cover the cake
- Let set out for 1-2 days before cutting into and serving

- Use toothpicks inserted into cake to keep clear wrap away from frosting
- Place cake into the refrigerator for 1 hour to harden the frosting before wrapping it
