These Wafer Pencil Cookies are the cutest back-to-school season. They are adorable, easy to make, and delicious. Made with wafer cookies, strawberry frosting, and white frosting, these no-bake cookies are a big hit with the kids – they’re quick, fun, and perfect for classroom parties, teacher gifts, or after-school snacks.

When the kids head back to school, I like to have fun treats for them to enjoy like this apple rice krispies treat, these apple-shaped sugar cookies, and these fun apple Oreo cookies.

These pencil-shaped cookies are the perfect addition to my back-to-school rotation of snacks. They are super simple to make and taste incredible.

Ingredients You’ll Need

  • Vanilla Creme Wafer Cookies
  • Strawberry Frosting
  • White Frosting, such as vanilla
  • Mini Chocolate Chips

How to Make these Cookies

Make the Base – Trim one end of the wafer cookie into a point by carefully slicing off two diagonal corners at the tip.

Eraser – Use a butter knife or a spreader to spread a small amount of strawberry frosting across the other end of the cookie.

Pencil Tip – Spread a small amount of white frosting onto the pointed tip of the cookie.

Pencil Lead – Place a dab of white frosting onto the bottom of the chocolate chip.

Push the chocolate chip onto the pointed tip of the wafer cookie.

Variations

Colored Pencils – Make different colored pencils with strawberry and chocolate wafer cookies and other types of frosting.

Sprinkles – Add sprinkles for extra fun
