Sweet Potato Appetizer
I love just about any potato recipe as a side recipe. I have to admit that sweet potatoes are a constant in my weekly diet. Most weeks, I’ll bake a few and put them in the fridge to heat up as my breakfast or a quick, nutritious lunch. They are such a healthy potato and a great starch substitute if you are trying to watch your weight.
Of course, these sweet potato bites wrapped in bacon aren’t as healthy as eating a normal sweet potato, but when it’s game day or a holiday party, you have to splurge a little with some bacon recipes like these gouda and bacon stuffed mushrooms.

Ingredients
- sweet potatoes – You’ll probably need 2 large or 3 medium sweet potatoes to make about 2 dozen sweet potato bites
- butter – you’ll want this to be unsalted. The bacon and a small amount of salt in this recipe will lend enough salt to this recipe, so you do not need salted butter
- salt – this will only be a small amount of salt. It is used to enhance the flavors of the spices and broth
- cayenne pepper – you don’t have to add this if you are worried about the spice, but it does not overpower the sweet potato bites. It is just a hint of spiciness that you will barely notice
- cinnamon – holiday foods and cinnamon go hand in hand, just like cinnamon and sweet potatoes. Cinnamon adds a little depth to the sweet potato flavor
- chicken broth – this will be used to mix with the seasonings and coat the chunks of sweet potato
- bacon – you’ll want to get center-cut bacon for this recipe. It will caramelize perfectly and provide plenty of bacon grease for these sweet potatoes to cook in. You’ll probably need about 2 lbs. of bacon for two dozen bites
- brown sugar – cinnamon, brown sugar, and sweet potatoes are a classic combination. With all of the salt in the bacon, broth, and seasonings, the brown sugar will lighten the flavors up and provide a balance
